AYAM GORENG KALASAN




 AYAM GORENG KALASAN

This legendary fried chicken is from Kalasan, Jogjakarta.
Characteristic of this chicken is tender, tasty and crispy in the outside. 
Served with steamed white rice and cucumber, sweet basil, tomato sliced, cabbage, long beans and eggplant (preferably the green round one- the one for Thai green curry).
Use free range chicken to get the best taste.

Ingredients:
1 whole Chicken, cut 4

6 cloves Garlic, pasted
1 tbsp Salt
1 tbsp Coriander
600 ml Coconut Water
2 sheets Salam Leaf
½ tsp Baking Powder
2 cm Galangal, bruised
1 tbsp Palm Sugar
1 tbsp Tamarind Juice
Oil for frying

Method:
Boil all ingredients into cooking pot until tender. 
Take out chicken.
Prepare frying pan and heat the oil. 
Fry chicken in hot oil with medium heat until golden brown.
Take out chicken and the crumbs.
Keep aside.

CHILI SAUCE:

Ingredients:
12 pcs Curly Red Chili
2 pcs Chili Padi, seedless
3 pcs Shallot
1clove Garlic
1 pc Red Tomato
¾ tsp Salt
½tsp Palm Sugar
3 tbsp Broth
3 tbsp Used oil from frying chicken

Method:
Boil Chili and Tomato until soft. 
Take out.
Pound with Shallot and Garlic.  
Heat oil in the frying pan.
Saute using used oil from frying chicken until fragrance.  
Add Salt and Sugar. 
Stir well.  
Add Broth and cooked until done.
