GRILLED KING PRAWN in Lemongrass Carrot Coulis
It's a healthy warm
starter or could be for main course with nice spiced grilled ocean fresh king
prawn, combine well with sweetness from carrot reduction, infused with lime
leaf and lemon-grass.
First introduced for
SPA menu as delicious and tasty meal, as normally peoples thought that healthy
dishes are always plain and not interesting.

Makes 1 portion
Ingredients:
3 pcs king prawns,
whole
1 tbsp herb oil
Salt and pepper to
taste
15 g carrot , julienned
10 g turnip,
julienned
10 g zucchini,
julienned
1 tbsp olive oil
1 clove garlic,
finely diced
2 stalks chives
Lemongrass Carrot
Coulis:
150 ml carrot juice
1 stalks lemongrass,
bruised
1 pc hot chili, whole
1 pc kaffir lime leaf
1 tsp lime juice
2 tsp fish sauce
Salt and pepper
Grilled King Prawn:
Marinade king prawn
with herb oil and season with salt and pepper.
Grilled for 7-10
minutes or until done.
Sauteed all
vegetables with olive oil and garlic. Stir fried for about 2-3 minutes or until
done. Set aside.
Lemongrass Carrot
Coulis:
Put carrot juice in a
sauce pot and add lemongrass, chili and lime leaf.
Bring to boil then
simmer for 2-3 minutes.
Season with lime
juice, fish sauce, salt and pepper.
Thicken with corn
starch if necessary.
How To Serve:
Arrange vegetable
julienned on a plate, pour the Lemongrass Carrot Coulis around and put Grilled
King Prawn on top of the vegetable.
Garnish with chives.
