SATE LILIT BALI Balinese style minced Chicken Satay
make: 20 pieces
Ingredients
500 g chicken, minced
2 sheets lime leaves, finely
shredded
30 g grated coconut,
unsweetened
20 pcs satay skewer, made out of lemongrass/flat
bamboo stick
Salt and pepper
Satay
Spices:
50 g shallots, finely
chopped
20 g garlic, finely chopped
2 pcs small red chili,
thinly sliced (optional)
10 g ginger, finely chopped
10 g galangal, finely
chopped
5 g lesser galangal, finely
chopped
5 g turmeric, finely chopped
1/2 tsp black pepper, ground
2 g coriander, ground
2 tbsp oil
Method:
To
make the satay spice:
Heat up oil in frying pan on
low heat and sauté all the spices, until aromatic and cooked. Remove from
flame, cool down and blend to a paste.
Mix the spice paste with the
minced chicken, add lime leaf and grated coconut. Seasons with salt and pepper.
Take 20 g of the mixture and work around the satay skewers, do the same with
the rest. Grill the satay to order.
