Lupis or Lopis are sweet snack that
made from steamed glutinous rice and served with palm sugar syrup and grated
coconut. Served as a snack to accompany
coffee or tea.
Ingredients:
1 kg glutinous rice, washed and
rinsed
2 sheets pandan leaves, knotted
1 tsp salt or to taste
¼ coconut, grated long by
holding facing coconut up, steamed
250 g palm sugar, shaved
How to make:
Steam glutinous rice and pandan
leaves for about 3 hours. Take out from steamer and let them be cool. Prepare banana leaves, make triangle, filled
up with glutinous rice. Fold and secured with string.
Boiled for about 2.5 hours.
Take out from flame and let them be cool.
Unwrapped Lupis and arrange on the serving plate. Topped with grated coconut steamed and palm
sugar syrup.
Palm sugar syrup:
Boil shaved palm sugar into hot water and add
¼ tsp salt.
Note:
other style than triangle is folded
round. Get banana leaves and make like
cylinder shape. Secure one end with toothpick. Fill up with glutinous rice and secure the
other end with toothpick.
